ABOUT THE SERIES
I love making the Sadhya. I love eating it even more. Every year in the weeks leading up to Onam, I find myself counting down to it — not just to the day itself, but to the cooking. The slow build of dishes across the days before. The way the kitchen starts to smell different.
This series is that countdown, documented. Each recipe is one piece of the Sadhya — explored not just as a dish but as a position on the banana leaf, with its own role in the whole. I cook this in the Trivandrum style, which is what I know. That means dishes like Vada Kootu Curry, which is specific to Trivandrum and not found in every Sadhya, and it means the particular balance of flavours that I grew up eating.
The Sadhya is a system. Every dish plays a part — the tangy against the creamy, the dry against the gravy, the sweet payasam that closes the meal. This series is about understanding that system one dish at a time, in an order that makes sense on the leaf.
