About the Recipe
Ari Unda is a traditional Kerala sweet snack made with roasted rice, jaggery, and coconut. It’s wholesome, naturally sweet, and needs no elaborate cooking—just a bit of roasting and mixing. Often enjoyed during festivals or as a quick homemade treat, these earthy, nutty balls are a taste of nostalgic simplicity.

Ingredients
1 cup Raw rice
1/2 cup Shredded coconut
1/2 cup Jaggery
A pinch Cardamom powder( optional)
preparation
Step 1:Roast the Rice
Add raw rice to a dry pan. Roast on medium flame, stirring continuously.
Once rice turns golden and gives a nutty aroma, remove and cool completely.
Step 2:Prepare the Sweet Mixture
Grind the roasted rice into a coarse powder (like fine sand).
In a bowl, combine rice powder with shredded coconut, jaggery powder, and a pinch of cardamom.
Mix well until it starts to clump. Add a few drops of warm water or ghee if needed to bind.
Step 3:Shape the Ari Unda
Take small portions of the mixture and press into round, firm balls using your palm.
Enjoy immediately or store in an airtight container.
