About the Recipe

Phirni is a traditional dessert popular in North India and Pakistan, made with ground rice slowly cooked in milk until thick and silky. Unlike kheer, the rice is finely ground, giving phirni its smooth texture. Traditionally served chilled in clay bowls, it is delicately flavored with cardamom and topped with nuts like pistachios or almonds, making it a festive and elegant sweet enjoyed during celebrations and special occasions.

Ingredients
 


  • 50 gm Small grain rice

  • 1 liter Milk

  • 100 gm Sugar

  • 1/4 tsp Turmeric

Step 1:Soak & Grind Rice

  • Wash the small grain rice thoroughly.

  • Soak it in water for about 20 minutes.

  • Drain and grind the rice into a fine powder.


Step 2: Prepare the Rice Mixture

  • In a bowl, combine the rice powder with milk and turmeric.

  • Mix well to form a smooth mixture without lumps.


Step 3: Cook the Base

  • Boil milk in a kadai.

  • Slowly stir in the prepared rice mixture while continuously stirring to prevent lumps.


Step 4: Thicken & Sweeten

  • Cook the mixture on medium-low heat, stirring often, until it becomes thick and creamy (about 15–20 minutes).

  • Add sugar and cook for a few more minutes until fully dissolved.


Step 5: Cool & Serve

  • Remove from heat and allow it to cool.

  • Serve chilled or at room temperature.
