This Homemade Gnocchi in Pink Sauce is the definition of cozy indulgence. Soft, pillowy gnocchi made from scratch is gently coated in a silky, creamy pink sauce—a blend of béchamel and tangy tomato goodness. With a sprinkle of cheese and herbs, every bite is pure comfort. Perfect for a weekend dinner or an elegant lunch, this dish brings a warm, restaurant-style Italian flair to your home kitchen.

Ingredients
 

Gnocchi

  • 2 Potatoes

  • 1/2 cup All purpose flour

  • A pinch Salt


Sauteed Veggies

  • 1/2 cup Sweet corn ( fresh or frozen

  • 1/2 cup Bell pepper

  • 1 tsp Olive oil

  • To taste Salt

  • To taste Black pepper powder


Pink sauce

  • 1 tbsp Butter

  • 1 tbsp All purpose flour

  • 1 cup Milk

  • 1/4 cup Grated cheese

  • 1/2 cup Tomato puree (or crushed canned tomatoes)

  • 1 Garlic clove (minced)

  • 1/2 tsp Chili flakes

  • 1/2 tsp Dried herbs (oregano/mixed herbs)

  • 1 tsp Olive oil

  • To taste Salt

  • To taste Black pepper powder

Step 1


Mash warm, peeled potatoes until smooth and lump-free.. Add a pinch of salt and gradually knead in the flour until a soft, slightly tacky dough forms. Roll into thin logs on a floured surface and cut into bite-sized pieces. (Optional) Press lightly with a fork to create grooves. Boil water with salt, drop gnocchi in, and cook until they float (about 2–3 minutes). Drain and set aside



Step 2


Heat olive oil in a small pan over medium heat. Add corn and diced capsicum. Sauté for 3–4 minutes until slightly softened and lightly golden.Season with a little salt and pepper. Set aside.



Step 3


In a small pan, sauté garlic in olive oil. Add tomato puree, chili flakes, herbs, and salt. Simmer 5–7 min until thickened


Step 4


In another pan, melt butter. Stir in flour and cook for a minute (don’t brown it). Slowly whisk in warm milk to avoid lumps. Stir until thickened and smooth. Add cheese, salt, and pepper. Stir until melted and creamy.


Step 5


Combine the tomato mixture into the béchamel sauce to create your pink sauce. Adjust consistency with a splash of milk if needed.


Step 6


Add cooked gnocchi and sauteed vegetables into the warm pink sauce. Stir gently to coat every piece evenly. Heat together for 2–3 minutes until everything’s well combined and glossy.
