About the Recipe

Rogan Josh is one of the most iconic dishes from Kashmiri cuisine, traditionally prepared with tender mutton simmered in a flavorful blend of spices and yogurt. The dish is known for its vibrant red hue, achieved using Kashmiri chili powder, and its slow-cooked depth of flavor. Despite its bold appearance, Rogan Josh has a balanced heat and a fragrant, silky gravy that pairs beautifully with rice or flatbreads.

Ingredients
 

  • 500gm Mutton (bone in)

  • 2-3 tbsp Oil

  • 1 tsp Cumin

  • 6-7 Cloves

  • 5-6 Green Cardamom (crushed)

  • 2 Black Cardamom (crushed)

  • 6 tsp Kashmiri Chilli Powder

  • 200 ml Whisked Curd/Yoghurt

  • 1 tsp Fennel Powder

  • 1 tsp Garam Masala Powder

  • 450 ml Water

  • to taste Salt

Step 1:Temper the Whole Spices

  • Heat oil in a pressure cooker.

  • Add cumin seeds, asafoetida (hing), and cloves.

  • Let them sizzle until aromatic.


Step 2: Sear the Mutton

  • Add bone-in mutton and sear on high heat briefly.

  • Add crushed green and black cardamom.

  • Cook on medium heat for several minutes, stirring until the mutton begins to brown.


Step 3: Add Spices

  • Add salt and Kashmiri chili powder.

  • Stir well so the spices coat the meat evenly.

  • Lower the heat and cook for a few minutes to allow the color and flavor to develop.


Step 4:  Add Yogurt and Aromatics

  • Reduce the heat and add fennel powder.

  • Slowly stir in whisked curd, mixing continuously to prevent curdling.

  • Cook until the oil begins to separate.


Step 5: Simmer and Pressure Cook

  • Add garam masala and mix well.

  • Pour in water and bring the mixture to a boil.

  • Close the lid and pressure cook until the mutton becomes tender.


Step 6: Finish& Serve

  • Open the lid and simmer for a few minutes to adjust the consistency.

  • Sprinkle green cardamom powder for a final aromatic touch.

  • Serve hot.
